ベトナム料理についている香草が苦手?

Not good at herbs attached to Vietnamese food?

先日ブログに掲載したブンやフォー、春巻き、ブンダウマムトム他をベトナムで食べる時に必ず数種類の香草がついてくる。ミントだと思っていた香草がオリエンタルバジルという名称だ。ミントと同じさわやかな香りがするため、おいしくないことはないが、ほとんどのベトナム料理に合わない。たとえ健康に良くても料理に入れて食べたくない。

When you eat Bun, Pho, spring rolls, Bundau Mamu Tom, etc., which I posted on my blog the other day, some kinds of herbs are always included in Vietnam. The herb that I thought was mint is called Oriental Basil. It has the same refreshing scent as mint, so it’s not bad, but it doesn’t fit most Vietnamese dishes. Even if it’s healthy, I don’t want to put it in a dish and eat it.

オリエンタルバジル以外にもパクチー(コリアンダー)、ミント、シソ、ワケギ、ノコギリコリアンダー、ドクダミ、ワケギ他多くの香草があるが、好きなパクチーとシソ以外は麺料理他と一緒に食べることはない。生野菜が好きではないので、ブンやフォーに生もやしを入れるだけのも苦手だ。野菜は生よりもゆでたり、炒めたりした方がおいしい。

Besides Oriental Basil, there are many other herbs such as Pakchi (Coriander), Mint, Perilla, Salmon, Saw Coriander, Dokudami, etc., but I do not eat it with noodle dishes other than my favorite Pakchi and Perilla. I don’t like raw vegetables, so I’m not good at just adding raw bean sprouts to Bun and Pho. Boiled and stir-fried vegetables are better than raw.

鍋(ホットポット)にも香草を入れるが、できれば入れてほしくない。生の香草を食べるよりは食べやすくなる。香草以外にカボチャやズッキーニの花を麺料理や鍋に入れることもベトナムでは人気だが、高い割には花もおいしくない。

I also put herbs in a hot pot, but I don’t want them if I can. Easier to eat than raw herbs. In addition to herbs, it is also popular in Vietnam to put pumpkin and zucchini flowers in noodle dishes and hot pot, but the flowers are not so tasty.

ベトナムにはエビを発酵させて作るマムトム(海老醤)と魚を発酵させて作るヌックマム(魚醤)がある。共にくさいので両方苦手な日本人がいるが、マムトムの方がよりくさいので苦手な日本人は多いのではないか。イカの塩辛を臭くしたような味でおいしいが、本当に腐ってるのでないかと心配になる味だ。

In Vietnam, there are Mam Tom (shrimp sauce) made by fermenting shrimp and Nuoc Mam (fish sauce) made by fermenting fish. There are some Japanese who are not good at both because they are stench together, but I think that there are many Japanese who are not good at Mamtom because they are more stench. It tastes like the salty squid smelled, but it’s worried that it’s really rotten.

北部の料理のブンダウマムトムはブン(麺)やダウ(厚揚げ)と、豚肉や野菜、香草他をマムトムにつけて食べる。こういう食べ方よりも麺料理に同じ具材を入れて食べる方がおいしい。ベトナム料理は味付けが薄いので、レモンペッパーソルトやヌックマム、マムトム他で自分が好きな味に調節しながら食べることができる。

Bun Dau Mam Tom, the northern dish, eats Bun (noodles) and Dau (thick fried), pork, vegetables, herbs, etc. It is better to put the same ingredients in noodle dishes and eat it than this way of eating. Vietnamese food is lightly seasoned, so you can eat it with lemon pepper salt, Nuoc Mam, Mam Tom, etc. while adjusting it to your taste.

ベトナム料理は味付けが薄く野菜や香草が多いためベトナム人の肥満率は日本人の肥満率よりもかなり低かったが、コーラ他のソフトドリンクや、マクドナルドやジョリビー他のファストフード、安いビールのせいで特に都会では日本人の肥満率を超えてしまっている。

Vietnam’s obesity rate was considerably lower than that of Japanese people because Vietnamese food is lightly seasoned and has a lot of vegetables and herbs, but because of soft drinks such as cola, fast food such as McDonald’s and Jolibee, and cheap beer. Especially in urban areas, the obesity rate of Japanese people is exceeded.
